When it comes to making bread, I want fast, easy, and no mess. So I knead my dough while it’s still in the bowl that I mixed it in. I add flour as needed, and any “leftover” flour on the bottom of the bowl is put in a bag and placed in the freezer for the next bread I make.
I’ve heard (I never thought this) that some people are intimidated by anything that requires yeast and kneading. It’s so easy, though! I somewhat addressed kneading in my post “Soaked Flour Whole Wheat Bread.” The pictures give a (in my opinion) great guide to step-by-step kneading. If you want pictures, go there. If you want video, watch this:
I turn my bowl 1/4 turn after each fold of the dough. I don’t think it’s faster to use a bowl or the counter, but it is less messy; less messy saves me time. And I need the time!
