Cheese Bread

If there is something that I like better than regular homemade bread, it’s cheesy homemade bread. The recipe is very simple if you already have frozen soaked whole wheat flour. I follow the basic recipe for Soaked Flour Whole Wheat Bread, with a few small changes.

    3 c soaked whole wheat flour
   ¼ c warm water
1 ½ T yeast
    3 T honey
    1 c cottage cheese
    1 c shredded mozzarella cheese
    1 c shredded cheddar cheese
    2 t salt
    2 t garlic powder
    2 t onion powder OR 2 T dried chopped onion
    2 t Italian Seasoning
3-6 c unbleached white flour

If your soaked flour was refrigerated or frozen, allow 3 cups to come to room temperature. Combine warm water, yeast, and honey; allow to proof. (See Yeast Breads: Not Scary!) While your yeast is proofing, combine 1 c flour, the cheeses, and all seasonings. Gently stir the yeast and soaked flour together; add the cheese/flour mixture. Knead in enough flour to make a firm dough that is not sticky. Place the dough in a oiled bowl and allow to rise. When doubled, form into 2 loaves; place in oiled loaf pans.  (If your loaf pans are smaller than mine, you will probably have 3 loaves and should reduce the baking time.)

I made 1/2 recipe this time.

When the loaves have doubled in size, place them in a 350° oven and bake for 50 minutes. Remove from pans immediately and allow to cool on a baking rack.

I LOVE using this recipe to make hamburger buns. Delicious! This makes great grilled cheese sandwiches. It’s also an easy way to make garlic bread;  just butter both sides and fry.
